Walnut, almond and chia seed bliss balls

Okay, that was a dumb question. Who doesn’t like cake, really?

I LOVE cake but I don’t eat it often because my jeans don’t like it. Ha! So, you can imagine my excitement when I accidentally created these morsels of magic. They taste like cake but they are WAY healthier.

I dare you to stop at just one.

Walnut, almond and chia seed bliss balls

Ingredients

1 cup walnuts
1 cup almonds
1/2 cup chia seeds
10 medjool dates, seeds removed
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 tablespoon coconut oil

Method

In a food processor, blitz the walnuts and almonds until shredded down into fine pieces.

Add the remaining ingredients and blitz until the mixture starts to hold together. This may take a minute or two depending on the power of your food processor.

Take a small amount of mixture in your hands and press into a ball shape. Continue with the rest of the mixture. Be aware that this mixture tends to fall apart if you try to ‘roll’ the bliss balls. So this is why you’ll need to press the mixture rather than roll.

Place the bliss balls in the freezer for 30 minutes to harden.

Chew!

These are best eaten cold.
