If you’re anything like me, the idea of eating raw zucchini is not something that gets the tastebuds dancing with delight.

Zucchini is for bakes and stir-fry and steamed vegetables. Well, that’s what I originally thought anyway.

Then I tried zucchini noodles (thanks, Bex!) and my perspective on zucchini shifted entirely.

The beautiful thing about raw zucchini is its neutral and absorptive nature. It happily soaks up the flavours of all those foods around it. Once I realised this, I knew I had to mix zucchini noodles with basil pesto (one of my all-time favourite foods). Continue Reading →

Anyone who knows me well knows that I’m just a little bit obsessed with chickpeas. Okay, that’s a huge understatement. I could probably eat them happily every day for the rest of my life. I’ve even been accused of lugging cans around with me while backpacking. Can you imagine my excitement when I discovered Chickpea Magazine?

I love chickpeas because not only are they hugely versatile, capable of shining whether hot or cold, but they’re also full of protein – an important consideration for any vegetarian.

I’m always trying to come up with new ways to show off chickpeas and this week I happened upon what I consider to be a major winner – a combo with sautéed broccoli. Oh, and now I have a new obsession: sautéing things to add to salads. Yuuuum. Continue Reading →

Super green broad bean salad

Guess what, amigos? I’ve finally arrived in sunny Spain! Barcelona, to be exact. Hurrah! I plan to spend the next year(ish) living in this beautiful country so it feels rather momentous to have finally landed here.

First port of call was the local supermercado and after spending the past few weeks convalescing in Slovakia, where the veggies were less than amazing (slight understatement!), I was thrilled to discover a veritable rainbow of tantalizingly fresh fruit and vegetables of all descriptions. I’ve now followed Alana down to South Australia to visit our wonderful family for Christmas and it was my turn to bunk down with our older sister, Candice and her partner Frew for a night. Cue vegetarian good times!

Candice and I spent a fabulous day poking around Adelaide’s Central Markets, finding treasures in vintage stores, walking her dogs (despite a near-death experience when her exuberant labrador almost knocked me off my feet and straight into a creek!) and grazing on cheese platters. By the end of the day we were tired out but only a little hungry. Candice gave Frew vague instructions to make “a light salad maybe with pumpkin, some greens and a vinaigrette dressing” … and that’s exactly what he created. Continue Reading →
