If you’re anything like me, the idea of eating raw zucchini is not something that gets the tastebuds dancing with delight.

Zucchini is for bakes and stir-fry and steamed vegetables. Well, that’s what I originally thought anyway.

Then I tried zucchini noodles (thanks, Bex!) and my perspective on zucchini shifted entirely.

The beautiful thing about raw zucchini is its neutral and absorptive nature. It happily soaks up the flavours of all those foods around it. Once I realised this, I knew I had to mix zucchini noodles with basil pesto (one of my all-time favourite foods). Continue Reading →

Easy three-ingredient spicy chickpeas

We’ve hit the road, Jack. In a campervan named Walter.

Seeing as we’re cooking out of a cramped little kitchen in the back of the van, simple and cheap recipes are where it’s at. Of course simple and cheap doesn’t have to mean tasteless. Quite the opposite actually. And this recipe is proof of that!

With three simple ingredients, we managed to turn a plain ol’ tin of chickpeas into delicious spicy, spicy goodness. Yum.

A couple weeks ago the weather here in Alicante turned. Suddenly it got cold. Like, really cold. Below 15-degrees cold.

Yeah, I know. Living in the land of eternal sunshine (I ♥ you, Spain) has warped my sense of what’s actually cold. Nonetheless, I’ve found myself snuggling up with hot water bottles, blankets, big baggy jumpers and endless cups of tea.

And I instantly started craving rich bowls of piping hot soup.

My friend Ania has this pizza she likes to make after work on Saturdays. It’s simple. She takes two frozen store-bought margarita pizzas, dumps a heap of grilled eggplant (aubergine for our non-Aussie friends) on top, and then silence descends as we greedily scoff down an entire pizza each.

Which I suppose is evidence enough that they’re freaking delicious. But I wasn’t satisfied.

Back in July this year, my parents came to Brisbane for a mini holiday and to watch me walk across the stage as I graduated from university. We spent the week in the beautiful sea-side town of Caloundra on The Sunshine Coast, chatting, wandering the local markets, exploring the nearby mountains and towns, strolling along the sandy beaches, and eating, lots and lots of eating.

I find, when I spend time with my parents, I instantly revert back to being a child. I love having them dote on me, listen to my every word, and tell me how amazing I am – seriously, where else do you get that kind of unconditional love?
