Walnut, almond and chia seed bliss balls

Walnut, almond and chia seed bliss balls

Put your hand up if you like cake!

Okay, that was a dumb question. Who doesn’t like cake, really?

I LOVE cake but I don’t eat it often because my jeans don’t like it. Ha! So, you can imagine my excitement when I accidentally created these morsels of magic. They taste like cake but they are WAY healthier.

I dare you to stop at just one. Continue Reading →

Peanut butter cookie batter bliss balls

Vegan peanut butter cookie batter bliss balls

This is hands-down the best kitchen accident I’ve ever had. Ever.

A few weeks back, while cooking up a vegan storm for my 30th birthday party, I decided to make the peanut butter cookie part of this peanut butter and salted caramel sandwiches recipe, featured over at Vegan Miam’s incredible blog.

Naturally, I couldn’t help but pop a finger into the batter for a quick taste test — and the flavour that exploded across my tongue stopped me in my tracks.

This had peanuty bliss ball goodness written all over it. Continue Reading →

Spiced choc banana bliss balls

Vegan spiced choc banana bliss balls

My 30s are shaping up to be pretty darn awesome, if the past couple weeks are anything to go by. Actually, if the past few weeks are anything to go by, I’ll be eating my way through the next decade. Nothing wrong with that, right?

To celebrate my birthday a few weeks back, I threw a little eco party at my apartment here in Alicante. We made origami pterodactyls from the pages of an old book to decorate the house. My friends bought plates of vegan food to share. Everyone was really good about drinking fancy wine out of recycled jars. I felt more at home in Spain than ever before.

Then Juan and Ania surprised me with the most delicious homemade banana and vanilla vegan ice cream cake. And as I bit into the base, I knew I wanted to eat this again. Regularly. In bliss ball form.

Raw vegan brownie bliss balls

Raw vegan brownie bliss balls

Oh my gosh do I have a surprise for you! These chocolately treats are going to rock your socks off.

Packed full of nutritious raw cashews and cacao, these bliss balls are a real cinch to make – just chuck everything into the food processor, blitz, roll and you’re done. Once chilled, the coconut oil and dates give these little yummies a sweet chewy texture that is pretty much guaranteed to send pesky sugar cravings packing. They taste so chocolately and naughty you would swear they have sugar in them (but they don’t!).

I used this recipe last weekend to create a base for a chocolate mousse slice (recipe for that one to come really soon) and everyone (even my lovely omnivore friends) raved about the base. Big thumbs up.

Who ever thought healthy vegan treats could taste this good? Continue Reading →
