When life gives you lemons, throat-searingly strong home-distilled moonshine and a real live Italian imported direct from the motherland, you just have to make limoncello.

And preferably the traditional way.

Carmelo, who shall henceforth be known as The Italian, had popped Down Under for a quick Christmas visit. He’s from Milan but his family’s Sicilian, which is important because southern Italy’s where this grand liqueur originally hails from.

If you’d popped past my little kitchen over the past few weeks, you’d probably have noticed a bunch of lentils quietly sprouting away in one corner.

I tried sprouting once, developed an obsession and soon began germinating legumes at such speed that the creation of multiple yum recipes was needed quick smart to use them all up, lest our house collapse beneath an ever-expanding sprout mountain.

Which is how this pretty spectacular (if I do say so myself) sprouted lentil dip came into being.

Before I get to the recipe, a quick word on sprouting. The process is super easy (exact steps are detailed below) but it does take a couple days. So why bother?

I love a good dahl. The vaguely hilarious name. The simplicity. The rich spices that transport me back to the thronging energy of India’s muggy streets, and an epic six-week trip with my besties back in 2009.

I also really like creamy things, though I’ve never really liked cream made from cow’s milk. That stuff’s meant for calves, not us humans.

Combining two loves is a beautiful thing, I reckon.

If you’re anything like me, the idea of eating raw zucchini is not something that gets the tastebuds dancing with delight.

Zucchini is for bakes and stir-fry and steamed vegetables. Well, that’s what I originally thought anyway.

Then I tried zucchini noodles (thanks, Bex!) and my perspective on zucchini shifted entirely.

The beautiful thing about raw zucchini is its neutral and absorptive nature. It happily soaks up the flavours of all those foods around it. Once I realised this, I knew I had to mix zucchini noodles with basil pesto (one of my all-time favourite foods). Continue Reading →
